Avocado Spinach Grilled Cheese

This is a super simple, healthy, and cheesy recipe great for any time of the day.

You're going to need:

  • Sandwich bread (I usually use whole wheat but didn't have any this time)
  • Handful of spinach
  • 1/2-1 avocado
  • A few slices of cheese (Using Daiya provolone and Field Roast coconut herb)
  • Thyme pesto sauce (recipe here)
  • Cooking oil

  • Start out by lightly spreading the thyme pesto sauce on each bread slice.
  • Add spinach on one bread slice.
  • Slice up your avocado and place them on top of the spinach layer.
  • Layer on your cheese slices.
  • Place the other bread slice on top.
  • Add a little bit of cooking oil on a pan (I used about a tsp of coconut oil)
  • Place your sandwich on the pan and toast each side of the bread until golden brown and cheese has melted.​
