Peanut Butter Protein Truffles

These cute little snacks packed with protein are to die for! 
This recipe is dairy free & gluten free!

INGREDIENTS

Peanut Butter Balls
1/2 cup peanut butter(sugar free peanut butter to make it a sugar free recipe)
1/2 cup honey
1 cup plant based protein powder(mine was 2 servings, 1 serving = 1/2 cup)

Chocolate "Ganache"
1/4 cup unsweetened cocoa powder
1/4 cup honey
6 tablespoons coconut oil(unrefined or refined, I chose unrefined to have a slight coconut taste to it)

  • In a mixing bowl, mix together honey and peanut butter.

  • Add plant based protein powder one scoop at a time for easy mixing. The consistency should feel like play-doh and not sticky.

  • Start pulling pieces off and rolling them into balls. I made mine about an inch in size.

  • Place your peanut butter balls on a plate or cooking sheet and let them sit in the freezer for 5-10 mins to firm up. ​

  • .While waiting on the peanut butter balls, mix cocoa powder, honey, and coconut oil in a bowl.

  • Place in the microwave for about 10 secs to melt.​

  • Once melted and your peanut butter balls have become firm, you can start glazing.

  • Feel free to be creative and have fun with this part! Dip them in the ganache, drizzle the ganache, create a design, or even create shapes! I made mine in cute teddy bears(make 2 extra tiny balls, shape them, & stick them on)!

  • Place your chocolate covered peanut butter balls in the freezer for 5 mins to harden.

If you didn't gobble them all up in under a minute like I did, keep them stored in the fridge to keep them from melting.
