Ratatouille

Ratatouille is a traditional French vegetable dish consisting of herbs and vegetables like eggplant, zucchini, squash, basil, thyme, and more. I have seen many different ratatouille recipes and decided to make my own according to my taste. Feel free to add, subtract, or replace anything if you don't like a certain ingredient. 

​Below, you will find my own recipe for ratatouille in a slow cooker.

Tomato Base Ingredients
  • 1 tbsp olive oil
  • 2-3 cans of tomato paste(6 oz)
  • 1 chopped onion
  • 1-2  tbsp minced garlic
  • 1-2 tbsp chopped basil leaves
  • 1/2-1 cup of water
  • salt & black pepper to taste


Tomato Base Recipe
  • Add olive oil to a pot and sauté the chopped onion and minced garlic.
  • Once sautéd, add in tomato paste and stir.
  • The consistency should be thick so add about a 1/2 cup to 1 cup of water.
  • After adding the water, the consistency should be like a sauce rather than paste.
  • Add in the chopped basil leaves and stir.
  • Stir in salt and black pepper.
  • Add sauce mixture in a blender or food processor and puree.
  • Pour the sauce in the slow cooker spreading evenly on the bottom.

Optional: sprinkle chopped basil leaves on the sauce layer.

Thyme Pesto Ingredients
  • 2 tbsp thyme
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • salt and black pepper to taste


Thyme Pesto Recipe
  • Pull the thyme leaves off the stem and add in a bowl.
  • Stir in the olive oil, minced garlic, salt, and black pepper.

Vegetable Layer Ingredients
  • 1-2 zucchini
  • 1-2 yellow squash
  • 1-2 baby eggplant
  • 2-3 roma tomatoes


Vegetable Layer Recipe
  • If you want the appearance of your ratatouille veggies to look even, make sure your veggies are about the same size.
  • Thinly slice all your veggies in rounds.
  • Now here's the creative part, place your sliced veggies in any order you want going around the slow cooker pot. 
  • Drizzle the thyme pesto on to the veggie layer.
  • ​Set your slow cooker to high 2.5 hours or low 4.5-5 hours.
